Ember-Roasted Beet & Bone Marrow
Heritage beets roasted directly in the coals until their skins blister and their centres collapse into something between sweet and smoky. Served alongside whipped bone marrow, hazelnut crumb and a thin slice of preserved lemon.

Dry-Aged Duck Breast Over Smouldering Oak
A 21-day dry-aged Moulard duck breast lowered over smouldering white oak and cherry wood for eight minutes. Finished with a reduction of aged Armagnac and wild blackberries. The skin is the point.

Burnt Honey Tart, Buckwheat & Smoke
Wildflower honey taken to the edge of caramelisation, set in a hand-pressed buckwheat shell and finished tableside with a cedar smoke cloche. A quiet, deliberate end to the evening.
