The Restaurant

Where fire
becomes flavour.

Cinder & Grove is a contemporary fire-led restaurant occupying a converted warehouse in Chicago's River North. Our kitchen revolves around a custom-built open hearth — the beating heart of every plate that leaves it.

We work with a tight network of Midwestern farms, foragers and fishmongers to build a menu that shifts with the seasons and speaks honestly about where it came from. Nothing here is accidental.

Signature — Fire-Kissed Beginnings

Ember-Roasted Beet & Bone Marrow

Heritage beets roasted directly in the coals until their skins blister and their centres collapse into something between sweet and smoky. Served alongside whipped bone marrow, hazelnut crumb and a thin slice of preserved lemon.

Signature — From the Hearth

Dry-Aged Duck Breast Over Smouldering Oak

A 21-day dry-aged Moulard duck breast lowered over smouldering white oak and cherry wood for eight minutes. Finished with a reduction of aged Armagnac and wild blackberries. The skin is the point.

Burnt Honey Tart, Buckwheat & Smoke

Wildflower honey taken to the edge of caramelisation, set in a hand-pressed buckwheat shell and finished tableside with a cedar smoke cloche. A quiet, deliberate end to the evening.

The Philosophy

Fire is not
a technique.
It is a truth.

Before refrigeration, before precision induction, before the tweezers and the pipettes — there was fire. At Cinder & Grove, we believe that the most honest cooking happens when you surrender control to heat, smoke and time.

Our open hearth burns with a combination of white oak, applewood and cherry. The choice of wood changes the character of the food. A lamb shoulder over applewood is a different animal than one over oak. We pay attention to these distinctions because our guests deserve to taste them.

An evening

Two private spaces — The Ember Room and The Grove Table — host intimate gatherings from six to eighteen guests. Each event is built around a bespoke menu developed in conversation with our kitchen.

Corporate dinners, milestone celebrations, private tastings. Whatever the occasion, the fire is always the centre of it.
